Quick and cheap meals that are also tasty and healthy are my favorite!! This is one of my go-to meals for a quick week night meal. I made this meal last night. I make it early in the week because there is plenty of left overs for week day lunches on the go.
Start with your favorite, in season, veggies. I made mine with green pepper, broccoli, onion, zucchini, and mushrooms. Anything can be substituted or left out depending on your taste.
Cut up all of the veggies in bite size pieces and pour into a roasting pan. Then season them up!! I used a packet of italian dressing mix ( you can use ranch instead if you prefer), salt, pepper, and olive oil. Then give it a good mix to spread all of the seasoning around.
Then, take your chicken, again, cutting into bite sized pieces. Sprinkle some salt and pepper on the chicken. Place the chicken in the pan right on top of those veggies.
Place in a 450 degree oven for about a thirty to forty minutes, stirring every 15 minutes.
I served this dish with some yellow rice, but you can eat it alone or with your favorite rice. This recipes has so many variables, so let me know how you make it!
