Crockpot Coconut Curry Chicken

Crockpot Coconut Curry ChickenThis is a simple, but delicious recipe. It’s super easy to make and won’t break the bank. A perfect dish for dinner guests. Just add some rice, or naan.


2lbs chicken breast

14 oz coconut milk

medium onion, chopped

3 cloves of minced garlic

4 potatoes, cut into cubes

1/2t pepper

1/2t salt

2T coconut oil

tomato paste

2T garam masala

1T curry powder

1T chili powder


Add the coconut oil to a medium frying pan over medium heat. Add the onions and garlic until the onions are translucent. Pour the coconut milk and tomato paste over the onions.  Add in the garam masala, curry powder, and chili powder. Stir in until fragrant.


Spray your crock pot with nonstick spray. Add in the chopped chicken and potatoes. Pour the sauce over the chicken and potatoes. Cover and set to low for about 4 to 5 hours.
