The best go-to lunch has got to be a home made salad. It’s a great way to save money and great way to stay healthy.
I make about four or five salads at once and pack them for the week. Just buy the base, like lettuce and any other salad fixings that you love. Then, just add in whatever you have extra of in the fridge or pantry.
Today I made these yummy salads:
1 can sweet corn
1 can kidney beans
1 can olives
1 can chickpeas
1 can of sliced beets
a handful of dried cranberries
a handful of chopped walnuts
some chia seeds
about a half pound left over chicken
head of lettuce
Now just make sure that you stack them right, heavy and moist on the bottom and lettuce on top. This keeps the lettuce from getting soggy when you store the salads in the fridge. The best part about this routine is the randomization. Switch up the ingredients each week and add some of your favorites. Maybe some grapes, or seeds. Yum!! Enjoy!
